Vegetables - Daikon Radish Shreds

1.First, peel a 10 cm long piece of daikon radish. |
2.Cut a smooth, thin, continuous sheet (use the Katsuramuki
technique). |
3.Cut the sheet into 10 cm lengths and stack. |

4.Cut the stack into shreds as finely as possible. |
5. Place in water. |
6.Using chopsticks, pick up an appropriate amount of radish
and lightly squeeze out the moisture with your left hand. |

|
7.Lay the clump of shreds on a board and cut off 2 cm
of the base, where the shreds bend. |
