"Hansuke"
is a grilled eel's head. This, cooked in an earthenware pot (donabe)
with tofu and scallions, is called "Hansuke Tofu".
You may doubt that grilled
eels' heads could taste good. But they actually make a great
stock, which flavours the tofu and scallions really well.
